The Homestead

The homestead is a general term we use to refer to our “country” life. Chickens, gardening, and anything “farm to table” we affectionally refer to as “the homestead.” The concept was born in covid quarantine. I love gardening, but you know the best garden is one you share. So, we share a huge garden with our neighbors down the road. Nothing makes me happier than BLT “season.” It’s the most wonderful time of the year! We’ll keep you posted with some of our favorite recipes throughout the year.

 

Andre’s Homestead Pickles

Guaranteed to elevate your burger!

Brine

  • 1cup vinegar : 1 cup water (I use ¼ apple cider to ¾ white vinegar)

  • 1 Tablespoon pickling or kosher salt

  • 1 teaspoon sugar

  • 4 garlic cloves peeled and lightly crushed

Heat the brine in a pot with garlic cloves until all dissolved, let cool to warm before use.

Pack the jars with…

  • Sliced cucumbers

  • 2-3 sprigs of fresh dill

  • ½ teaspoon dried dill

  • Whole black pepper corn

  • Whole mustard seed

  • Whole coriander

Pour the warm (not hot) brine over the packed jars, seal, and refrigerate for 48 hours. Enjoy!
